Kid Powered BBQ Chicken Pizza

Yield: 1 large pizza (serves 4)

1-2 Tbsp olive oil
1/4 cup onion, finely chopped
Salt and Pepper
1 tsp garlic, minced
1/4 cup tomato paste
1/4 cup ketchup
1 Tbsp mustard
2 Tbsp brown sugar or honey
1 ½ Tbsp vinegar
1/2 lb chicken breast, chopped, cooked
1 lb prepared pizza dough
½ cup shredded Cheddar cheese
¼ cup shredded Mozzarella cheese
1/2 cup prepared pizza or tomato sauce
1/2 red onion, cut into thin ribbons

1. Preheat the oven to 400.
2. Heat a saucepot over medium heat and add the oil and onions, cooking until the onions are translucent and tender, about 10 minutes.
3. Add the garlic and cook 1-2 minutes, then stir in tomato paste, ketchup, mustard, Worcestershire sauce, brown sugar, salt, pepper, and
vinegar. Raise the heat to medium- high and simmer, while rapidly stirring, until everything is blended and smooth.
4. Lower the heat to a simmer and add the chopped chicken. Stir to coat all the chicken, then remove from the heat and let cool slightly.
5. Knead pizza dough on a lightly floured surface until stretchy.
6. Stretch out the pizza dough and place on a pizza stone or oiled baking sheet.

To build the pizzas:
1. Spoon tomato sauce evenly over pizza dough and sprinkle with shredded cheeses
2. Using a slotted spoon, spoon chicken over the pizzas, reserving some of the sauce.
3. Top with caramelized onions and back for 7-10 minutes or until dough is cooked through
4. Remove from oven and cool slightly. Drizzle extra BBQ sauce over the tops of the pizzas before serving.
